Recipe: Quick and Easy Chicken Fried Rice
Ingredients:
- 2 cups cooked rice
- 1 chicken breast, diced
- 2 eggs, beaten
- 1/2 cup frozen mixed vegetables
- 2 tablespoons soy sauce
- 1 tablespoon vegetable oil
- Salt and pepper to taste
- Green onions for garnish (optional)
Instructions:
1. In a large skillet or wok, heat vegetable oil over medium-high heat.
2. Add diced chicken breast and cook until browned and cooked through.
3. Push the chicken to one side of the skillet and pour the beaten eggs into the other side. Scramble the eggs until cooked.
4. Add the cooked rice and frozen mixed vegetables to the skillet. Stir everything together.
5. Pour soy sauce over the mixture and continue to stir until everything is well combined.
6. Season with salt and pepper to taste.
7. Cook for an additional 2-3 minutes, stirring occasionally.
8. Remove from heat and garnish with chopped green onions, if desired.
