Ingredients:
- 2 potatoes, diced
- 2 tomatoes, sliced
- 1 brinjal (eggplant), cubed
- 1 onion, sliced
- Olive oil

- Mixed herbs (optional)

Instructions:
1. Preheat the oven to 400°F (200°C).
2. In a large mixing bowl, combine the diced potatoes, sliced tomatoes, cubed brinjal, and sliced onion.
