Recipe: Smashed Cucumber Salad with Rice and Chicken

Ingredients:
- 1 cucumber
- 1 cup cooked rice
- 1 chicken breast
- Salt and pepper to taste
- Olive oil
- Lemon juice
- Fresh herbs (such as parsley or mint)

Instructions:
1. Start by cooking the chicken breast. Season it with salt and pepper, then cook it in a pan with a little olive oil until fully cooked. Once done, set it aside to cool.
2. While the chicken is cooking, prepare the cucumber. Wash and peel the cucumber, then cut it into chunks. Place the chunks in a ziplock bag and gently smash them with a rolling pin or the back of a knife to release the juices. Transfer the smashed cucumber to a bowl.
3. Add the cooked rice to the bowl with the smashed cucumber.
4. Shred or chop the cooked chicken breast and add it to the bowl as well.
5. Drizzle the salad with olive oil and lemon juice, then season with salt and pepper to taste. Toss everything together to combine.
6. Finish the salad by adding some fresh herbs for extra flavor.
7. Serve the smashed cucumber salad with rice and chicken as a delicious and refreshing meal.
