Recipe: Soupe Champignon

Ingredients:
- 500g fresh mushrooms, sliced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 4 cups vegetable broth
- 1 cup heavy cream
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions:
1. In a large pot, melt the butter over medium heat.
2. Add the chopped onion and minced garlic, sauté until fragrant.
3. Add the sliced mushrooms and cook until they release their liquid and start to brown.
4. Pour in the vegetable broth and bring to a simmer. Let it cook for about 15 minutes.
5. Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup to a blender in batches to puree.
6. Stir in the heavy cream and season with salt and pepper to taste.
7. Let the soup simmer for another 5 minutes to allow the flavors to meld together.
8. Serve hot, garnished with fresh parsley.
