Recipe: Tajine with Paneer
Ingredients:
- 1 block of paneer, cubed
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 red bell pepper, sliced
- 1 zucchini, sliced
- 1 can of chickpeas, drained and rinsed
- 1 can of diced tomatoes
- 1 tablespoon of olive oil
- 1 teaspoon of ground cumin
- 1 teaspoon of ground coriander
- 1 teaspoon of paprika
- Salt and pepper to taste
- Fresh cilantro for garnish
Step by Step Guide:
1. Heat olive oil in a large tajine or skillet over medium heat.
2. Add the chopped onion and minced garlic, sauté until fragrant.
3. Add the cubed paneer to the tajine and cook until golden brown on all sides.
4. Stir in the sliced red bell pepper and zucchini, cook for a few minutes until slightly softened.
5. Add the drained chickpeas, diced tomatoes, ground cumin, ground coriander, paprika, salt, and pepper. Stir well to combine.
6. Cover the tajine and let it simmer on low heat for about 15-20 minutes, allowing the flavors to meld together.
7. Taste and adjust seasoning if needed.
8. Garnish with fresh cilantro before serving.
9. Serve the tajine with paneer hot with couscous or bread.
