Recipe: Thai Inspired Bibimbap (Vegetarian)

Ingredients:
- 1 cup cooked jasmine rice
- 1 cup mixed vegetables (such as bell peppers, carrots, zucchini)
- 1/2 cup sliced mushrooms
- 1/2 cup shredded cabbage
- 1/4 cup chopped peanuts
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon lime juice
- 1 tablespoon brown sugar
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- Fresh cilantro for garnish

Step by Step Guide:
1. In a small bowl, whisk together the soy sauce, sesame oil, lime juice, brown sugar, garlic, and ginger to make the sauce.
2. Heat a large skillet over medium heat and add a little oil. Add the mixed vegetables and mushrooms, and sauté until they are cooked through.
3. Divide the cooked rice among serving bowls.
4. Top the rice with the cooked vegetables and mushrooms.
5. Drizzle the sauce over the top of each bowl.
6. Sprinkle with shredded cabbage and chopped peanuts.
7. Garnish with fresh cilantro.
