Recipe: Tofu Stir Fry with Jasmine Rice

Ingredients:
- 1 cup Jasmine rice
- 1 block tofu, cubed
- 2 cups stir fry vegetables (such as bell peppers, broccoli, carrots, and snap peas)
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- Salt and pepper to taste
- Green onions for garnish

Instructions:
1. Cook the Jasmine rice according to package instructions and set aside.
2. In a large skillet or wok, heat 1 tablespoon of sesame oil over medium heat.
3. Add the cubed tofu to the skillet and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside.
4. In the same skillet, add the remaining sesame oil and stir fry the minced garlic and ginger for 1-2 minutes until fragrant.
5. Add the stir fry vegetables to the skillet and cook until they are tender-crisp, about 5-7 minutes.
6. Return the tofu to the skillet and add the soy sauce. Stir well to combine and cook for an additional 2-3 minutes.
7. Season with salt and pepper to taste.
8. Serve the tofu stir fry over the cooked Jasmine rice and garnish with chopped green onions.
