Recipe: Tofu Stir-Fry with Mushrooms and Red Capsicum

Ingredients:
- 1 block of firm tofu, drained and cubed
- 1 cup of sliced mushrooms
- 1 red capsicum, sliced
- 2 cloves of garlic, minced
- 2 tablespoons of soy sauce
- 1 tablespoon of sesame oil
- 1 tablespoon of vegetable oil
- Salt and pepper to taste
- Cooked rice for serving

Instructions:
1. Heat vegetable oil in a large skillet over medium heat.
2. Add the cubed tofu to the skillet and cook until golden brown on all sides, about 5-7 minutes. Remove tofu from the skillet and set aside.
3. In the same skillet, add the sliced mushrooms and red capsicum. Cook until vegetables are tender, about 5 minutes.
4. Add minced garlic to the skillet and cook for another minute until fragrant.
5. Return the tofu to the skillet and add soy sauce and sesame oil. Stir well to combine all the ingredients.
6. Season with salt and pepper to taste.
7. Serve the tofu stir-fry over cooked rice.
