Ingredients:
- 4 cups of seafood broth
- 1 stalk of lemongrass, smashed
- 3 kaffir lime leaves
- 1 inch piece of galangal, sliced
- 3-4 Thai bird's eye chilies, smashed
- 200g shrimp, peeled and deveined
- 200g squid, cleaned and sliced
- 200g mussels, cleaned
- 200g fish fillet, cubed
- 200g cherry tomatoes
- 1 onion, sliced
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon sugar
- Fresh cilantro leaves for garnish
Step by Step Guide:
1. In a pot, bring the seafood broth to a boil.
2. Add lemongrass, kaffir lime leaves, galangal, and Thai bird's eye chilies to the broth. Let it simmer for 5-10 minutes to infuse the flavors.
3. Add the shrimp, squid, mussels, fish fillet, cherry tomatoes, and onion to the pot. Cook until the seafood is cooked through.
4. Season the soup with fish sauce, lime juice, and sugar. Adjust the seasoning according to your taste.
5. Remove the lemongrass, kaffir lime leaves, galangal, and Thai bird's eye chilies from the pot.
6. Serve the Tom Yum hot, garnished with fresh cilantro leaves.
