Ingredients:
- 4 cups chicken or seafood broth
- 1 stalk lemongrass, smashed
- 3 kaffir lime leaves
- 2-3 Thai bird's eye chilies, smashed
- 1 inch piece of galangal, sliced
- 200g shrimp, peeled and deveined
- 200g squid, cleaned and sliced into rings
- 200g mussels, cleaned
- 200g fish fillet, cut into bite-sized pieces
- 1 tomato, cut into wedges
- 1 onion, sliced
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon sugar
- Fresh cilantro leaves for garnish
Step by Step Guide:
1. In a pot, bring the chicken or seafood broth to a boil.
2. Add lemongrass, kaffir lime leaves, Thai bird's eye chilies, and galangal to the broth. Let it simmer for 5-10 minutes to infuse the flavors.
3. Add the shrimp, squid, mussels, fish fillet, tomato, and onion to the pot. Cook until the seafood is cooked through.
4. Season the soup with fish sauce, lime juice, and sugar. Adjust the seasoning according to your taste preference.
5. Remove the pot from heat and discard the lemongrass, kaffir lime leaves, Thai bird's eye chilies, and galangal.
6. Serve the Tom Yum hot, garnished with fresh cilantro leaves.
