Recipe: Tom Yum with Seafood

Ingredients:
- 4 cups of seafood broth
- 1 stalk of lemongrass, smashed
- 3 kaffir lime leaves
- 1 inch piece of galangal, sliced
- 3-4 Thai bird's eye chilies, smashed
- 200g mixed seafood (shrimp, squid, mussels)
- 200g mushrooms, sliced
- 2 tomatoes, quartered
- 1 onion, sliced
- 2 tablespoons fish sauce
- 2 tablespoons lime juice
- 1 tablespoon sugar
- Fresh cilantro leaves for garnish

Step by Step Guide:
1. In a pot, bring the seafood broth to a boil.
2. Add the lemongrass, kaffir lime leaves, galangal, and Thai bird's eye chilies to the broth. Let it simmer for 5 minutes to infuse the flavors.
3. Add the mixed seafood, mushrooms, tomatoes, and onion to the pot. Cook for another 5 minutes or until the seafood is cooked through.
4. Season the soup with fish sauce, lime juice, and sugar. Adjust the seasoning to your taste.
5. Remove the lemongrass, kaffir lime leaves, and galangal from the pot.
6. Serve the Tom Yum soup hot, garnished with fresh cilantro leaves.
