Recipe: Tomato Pepper Rice
Ingredients:
- 1 cup rice
- 1 red bell pepper
- 1 tsp salt
- 2 tomatoes
Instructions:
1. Rinse the rice under cold water until the water runs clear. Drain and set aside.
2. Dice the red bell pepper and tomatoes.
3. In a pot, heat some oil over medium heat. Add the diced bell pepper and sauté until slightly softened.
4. Add the diced tomatoes to the pot and cook until they start to break down.
5. Season with salt and stir well.
6. Add the rinsed rice to the pot and stir to combine with the vegetables.
7. Add enough water to cover the rice by about an inch.
8. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 15-20 minutes or until the rice is cooked through.
9. Fluff the rice with a fork and serve hot.
