Recipe: Vegetarian Lentil and Root Vegetable Stew

Ingredients:
- 1 cup green or brown lentils, rinsed and drained
- 2 carrots, peeled and diced
- 2 parsnips, peeled and diced
- 1 sweet potato, peeled and diced
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish

Instructions:
1. In a large pot, heat some olive oil over medium heat. Add the diced onion and garlic, and sauté until fragrant.
2. Add the diced carrots, parsnips, and sweet potato to the pot. Stir and cook for a few minutes until the vegetables start to soften.
3. Pour in the vegetable broth and add the rinsed lentils to the pot. Season with cumin, paprika, salt, and pepper. Stir well to combine.
4. Bring the stew to a boil, then reduce heat to low and let it simmer for about 30-40 minutes, or until the lentils and vegetables are tender.
5. Taste and adjust seasoning if needed. Serve the stew hot, garnished with fresh parsley.
