Red Bean and Carrot Frittata
Ingredients:
- 2 tablespoons olive oil
- 1 cup cooked red beans
- 2 cloves garlic, minced
- 2 carrots, diced
- 6 eggs
- Salt and pepper, to taste
Instructions:
1. Heat the olive oil in a large skillet over medium heat.
2. Add the garlic and carrots and cook until softened, about 5 minutes.
3. Add the red beans and cook for an additional 2 minutes.
4. In a large bowl, whisk together the eggs, salt, and pepper.
5. Pour the egg mixture into the skillet and stir to combine with the vegetables.
6. Reduce the heat to low and cook for 10-12 minutes, stirring occasionally, until the eggs are cooked through.
7. Serve warm. Enjoy!
