Teriyaki Salmon and Rice Bowl
Ingredients:
- 2 salmon fillets
- 2 tablespoons teriyaki sauce
- 2 cups cooked white rice
- 1 cup broccoli florets
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F.
2. Place salmon fillets on a baking sheet lined with parchment paper.
3. Drizzle teriyaki sauce over the salmon and season with salt and pepper.
4. Bake for 15 minutes or until salmon is cooked through.
5. Meanwhile, heat olive oil in a large skillet over medium heat.
6. Add broccoli florets and cook for 5 minutes, stirring occasionally.
7. Add cooked white rice and stir to combine.
8. Cook for an additional 5 minutes or until heated through.
9. To assemble the bowl, divide the rice and broccoli between two plates.
10. Top each plate with a salmon fillet and serve.
