Ingredients:
- 1 cup risotto rice (riso)
- 100g speck, diced
- 2 apples, peeled and diced
- 1/2 cup Grana Padano cheese, grated
- 1/2 cup champagne
- 4 cups chicken or vegetable broth
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:
1. In a large skillet, heat the olive oil over medium heat. Add the diced speck and cook until crispy, about 5 minutes.
2. Add the diced apples to the skillet and cook for another 3-4 minutes until they start to soften.
3. Add the risotto rice to the skillet and stir to coat the rice with the oil, speck, and apples.
4. Pour in the champagne and cook until it is mostly absorbed by the rice.
5. Begin adding the broth, one ladle at a time, stirring constantly and allowing the liquid to be absorbed before adding more.
6. Continue this process until the risotto is creamy and the rice is cooked to al dente, about 18-20 minutes.
7. Stir in the grated Grana Padano cheese and season with salt and pepper to taste.
8. Remove from heat and let the risotto rest for a few minutes before serving.
9. Serve the risotto hot, garnished with additional Grana Padano cheese if desired.
