Roasted Butternut Squash with Maple Glaze
Ingredients:
- 1 medium butternut squash, peeled and cubed
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1/4 cup maple syrup
- 2 tablespoons butter
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
Instructions:
1. Preheat the oven to 400°F (200°C).
2. In a large bowl, toss the butternut squash cubes with olive oil, salt, and pepper until evenly coated.
3. Spread the squash out in a single layer on a baking sheet.
4. Roast in the preheated oven for 25-30 minutes, or until the squash is tender and starting to caramelize.
5. In a small saucepan, combine the maple syrup, butter, cinnamon, and nutmeg.
6. Cook over low heat until the butter is melted and the mixture is smooth.
7. Remove the roasted squash from the oven and drizzle the maple glaze over the top.
8. Toss the squash gently to coat evenly with the glaze.
9. Return the squash to the oven and roast for an additional 5-10 minutes.
10. Serve hot and enjoy!
