Roasted Cauliflower, Celeriac, and Fennel
Ingredients:
-1 head of cauliflower, cut into florets
-1 celeriac, peeled and cut into cubes
-1 fennel bulb, cut into wedges
-2 tablespoons olive oil
-Salt and pepper, to taste
-2 tablespoons chopped fresh parsley
Instructions:
1. Preheat oven to 400 degrees F.
2. Place the cauliflower, celeriac, and fennel onto a large baking sheet. Drizzle with olive oil and season with salt and pepper.
3. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and lightly browned.
4. Remove from the oven and sprinkle with chopped parsley. Serve warm. Enjoy!
