Roasted Chicken and Potatoes
Ingredients:
-2 lbs. chicken thighs
-2 lbs. potatoes, peeled and cut into 1-inch cubes
-1 large onion, chopped
-2 tablespoons olive oil
-2 teaspoons garlic powder
-1 teaspoon paprika
-1 teaspoon dried oregano
-1 teaspoon dried thyme
-Salt and pepper, to taste
Instructions:
1. Preheat oven to 375 degrees F.
2. In a large bowl, combine the potatoes, onion, olive oil, garlic powder, paprika, oregano, thyme, salt, and pepper. Toss to combine.
3. Place the chicken thighs in a large baking dish. Top with the potato mixture.
4. Bake for 45 minutes, or until the chicken is cooked through and the potatoes are tender.
5. Serve and enjoy!
