Roasted Chicken and Vegetables
Ingredients:
-2 pounds of chicken thighs
-2 large potatoes, cut into 1-inch cubes
-2 large carrots, cut into 1-inch cubes
-2 tablespoons olive oil
-2 teaspoons garlic powder
-1 teaspoon paprika
-1 teaspoon dried oregano
-1 teaspoon dried thyme
-Salt and pepper, to taste
Instructions:
1. Preheat oven to 425°F.
2. In a large bowl, combine potatoes, carrots, olive oil, garlic powder, paprika, oregano, thyme, salt, and pepper. Mix until vegetables are evenly coated.
3. Place chicken thighs on a baking sheet and spread vegetables around them.
4. Roast in preheated oven for 25-30 minutes, or until chicken is cooked through and vegetables are tender.
5. Serve and enjoy!
