Roasted Chicken Legs with Carrots, Sweet Potatoes, and Broccoli
Ingredients:
- 4 chicken legs
- 2 carrots, peeled and chopped
- 2 sweet potatoes, peeled and chopped
- 1 head of broccoli, cut into florets
- 2 cups of chicken broth
- 1 cup of ricotta
- Salt and pepper to taste
Instructions:
1. Preheat the oven to 375°F.
2. Place the chicken legs in a baking dish.
3. In a separate bowl, mix together the carrots, sweet potatoes, and broccoli.
4. Add the vegetable mixture to the baking dish, and pour the chicken broth over the top.
5. Bake in the preheated oven for 45 minutes.
6. Remove the baking dish from the oven and top with the ricotta.
7. Return to the oven and bake for an additional 15 minutes.
8. Serve hot with salt and pepper to taste. Enjoy!
