Recipe Name: Roasted Chickpea and Quinoa Salad with Cauliflower

Ingredients:
- 1 can of chickpeas, drained and rinsed
- 1 cup quinoa
- 1 small head of cauliflower, cut into florets
- 3 cloves of garlic, minced
- 1 onion, diced
- Olive oil
- Salt and pepper to taste

Instructions:
1. Preheat the oven to 400°F (200°C).
2. In a large bowl, toss the chickpeas with a drizzle of olive oil, minced garlic, salt, and pepper. Spread them out on a baking sheet and roast in the oven for 20-25 minutes, until crispy.
3. In a separate pot, cook the quinoa according to package instructions.
4. In a large skillet, heat some olive oil over medium heat. Add the diced onion and cook until translucent.
5. Add the cauliflower florets to the skillet and cook until they start to brown and become tender.
6. Once the quinoa is cooked, add it to the skillet with the cauliflower and onion. Stir to combine.
7. Remove the roasted chickpeas from the oven and add them to the skillet. Mix everything together.
8. Season the salad with additional salt and pepper to taste.
9. Serve the roasted chickpea and quinoa salad with cauliflower warm or at room temperature. Enjoy!
