Roasted Chickpea Tahini Salad

Ingredients:

- 2 cups cooked chickpeas
- 2 tablespoons tahini
- 1 teaspoon cumin powder
- 2 tablespoons olive oil
- 2 tablespoons lemon juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper

Instructions:

1. Preheat oven to 375°F.

2. Spread the cooked chickpeas on a baking sheet and roast for 15 minutes, stirring occasionally.

3. In a small bowl, whisk together the tahini, cumin powder, olive oil, lemon juice, salt, and black pepper.

4. Remove the roasted chickpeas from the oven and transfer to a large bowl.

5. Pour the tahini mixture over the chickpeas and stir to combine.

6. Serve the roasted chickpea tahini salad warm or cold. Enjoy!
