Roasted Duck and Potato Nacho Bake
Ingredients:
-1 pound potatoes, peeled and cut into 1 inch cubes
-4 ounces prosciutto, cut into small cubes
-2 tablespoons duck fat
-1 cup nacho cheese
-2 shallots, diced
-2 garlic cloves, minced
-2 slices of roasted duck, shredded
Instructions:
1. Preheat the oven to 375 degrees F.
2. Place the potatoes in a large bowl and toss with the prosciutto, duck fat, and 1/2 cup of the nacho cheese.
3. Spread the potatoes in an even layer on a baking sheet.
4. Bake for 25 minutes, stirring occasionally, until the potatoes are tender.
5. Meanwhile, heat a small skillet over medium heat and add the shallots and garlic. Cook until softened, about 3 minutes.
6. Remove the potatoes from the oven and top with the shallots, garlic, and shredded duck.
7. Sprinkle the remaining 1/2 cup of nacho cheese over the top.
8. Bake for an additional 10 minutes, until the cheese is melted and bubbly.
9. Serve warm and enjoy!
