Roasted Garlic and Onion Potatoes

Ingredients:

- 4 large potatoes, peeled and cut into 1-inch cubes
- 2 large onions, cut into 1-inch cubes
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper, to taste

Instructions:

1. Preheat oven to 400°F.

2. In a large bowl, combine potatoes, onions, garlic, olive oil, oregano, salt, and pepper. Toss to coat.

3. Spread the mixture onto a large baking sheet.

4. Bake for 25-30 minutes, stirring occasionally, until potatoes are tender and golden brown.

5. Serve warm. Enjoy!
