Roasted Potato and Onion Broccoli Bowl
Ingredients:
- 2 large potatoes, peeled and cut into 1-inch cubes
- 1 red onion, peeled and cut into 1-inch cubes
- 1 yellow onion, peeled and cut into 1-inch cubes
- 2 cups broccoli florets
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper, to taste
Instructions:
1. Preheat oven to 400°F.
2. In a large bowl, combine potatoes, red onion, yellow onion, and broccoli.
3. Drizzle olive oil over the vegetables and season with garlic powder, oregano, salt, and pepper.
4. Toss to combine.
5. Spread the vegetables onto a baking sheet and roast for 25-30 minutes, stirring halfway through.
6. Serve warm. Enjoy!
