Roasted Potato and Tomato Salad

Ingredients:

- 4 large potatoes, peeled and cut into cubes
- 2 large tomatoes, diced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste

Instructions:

1. Preheat oven to 400°F.

2. Place the potatoes in a large bowl and add the olive oil, garlic powder, oregano, salt and pepper. Toss to coat the potatoes.

3. Spread the potatoes on a baking sheet and bake for 25 minutes, or until golden brown and tender.

4. In a large bowl, combine the roasted potatoes and diced tomatoes.

5. Serve warm or chilled. Enjoy!
