Roasted Potato and Vegetable Medley
Ingredients:
- 4 potatoes, cut into 1-inch cubes
- 2 garlic cloves, minced
- 1 onion, cut into 1-inch cubes
- 2 bell peppers, cut into 1-inch cubes
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- Salt and pepper, to taste
Instructions:
1. Preheat oven to 400°F.
2. Place potatoes, garlic, onion, and bell peppers in a large bowl.
3. Drizzle with olive oil and season with oregano, salt, and pepper.
4. Toss to coat.
5. Spread the vegetables onto a baking sheet and roast for 25-30 minutes, stirring halfway through.
6. Serve warm. Enjoy!
