Roasted Potato, Cauliflower, and Onion
Ingredients:
- 2 large potatoes, cut into cubes
- 1 head of cauliflower, cut into florets
- 1 large onion, chopped
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
Instructions:
1. Preheat oven to 400 degrees F.
2. Place potatoes, cauliflower, and onion on a large baking sheet. Drizzle with olive oil and sprinkle with garlic powder, oregano, salt, and pepper.
3. Toss to combine and spread out in an even layer.
4. Roast in preheated oven for 25-30 minutes, stirring once halfway through, until potatoes and cauliflower are tender and lightly browned.
5. Serve warm. Enjoy!
