Roasted Potato, Leek, Carrot, and Blue Cheese Salad
Ingredients:
- 2 potatoes, peeled and diced
- 1 leek, sliced
- 1 carrot, diced
- 2 turnips, diced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 1/4 cup crumbled blue cheese
Instructions:
1. Preheat oven to 400 degrees F.
2. Place potatoes, leek, carrot, and turnip in a large bowl. Drizzle with olive oil and season with salt and pepper. Toss to combine.
3. Spread the vegetables onto a baking sheet and roast for 20 minutes, or until vegetables are tender.
4. Place roasted vegetables in a large bowl and add crumbled blue cheese. Toss to combine.
5. Serve warm or at room temperature. Enjoy!
