Roasted Potatoes with Caramelized Onions
Ingredients:
- 2 large potatoes, peeled and cut into 1-inch cubes
- 2 tablespoons onion oil
- 1 large onion, thinly sliced
- Salt and pepper, to taste
Instructions:
1. Preheat oven to 400 degrees F.
2. Place the potato cubes in a large bowl and drizzle with onion oil. Toss to coat.
3. Spread the potatoes in a single layer on a baking sheet. Roast in the preheated oven for 25 minutes, or until golden and tender.
4. Meanwhile, heat the remaining onion oil in a large skillet over medium heat. Add the onion slices and cook, stirring occasionally, until golden and caramelized, about 10 minutes.
5. Remove the potatoes from the oven and transfer to a large bowl. Add the caramelized onions and season with salt and pepper, to taste.
6. Serve warm. Enjoy!
