Make Roasted Pumpkin Soup

Ingredients:
- 1 small pumpkin, peeled and diced
- 1 onion, chopped
- 2 tomatoes, diced
- 3 cloves of garlic, minced
- Salt to taste
Instructions:
1. Preheat the oven to 400°F (200°C).
2. Place the diced pumpkin on a baking sheet and drizzle with olive oil. Roast in the oven for 25-30 minutes or until tender.
3. In a large pot, sauté the chopped onion and minced garlic until fragrant.
4. Add the diced tomatoes to the pot and cook until they start to soften.
5. Add the roasted pumpkin to the pot and stir to combine all the ingredients.
6. Pour enough water to cover the vegetables and bring to a simmer.
7. Let the soup simmer for about 15-20 minutes.
8. Using an immersion blender, blend the soup until smooth. Alternatively, you can transfer the soup to a blender in batches to puree.
9. Season the soup with salt to taste.
10. Serve hot and enjoy!
