Roasted Roman Cabbage and Chickpea Bowl
Ingredients:
-1 head of roman cabbage, chopped into 1-inch pieces
-1 can of chickpeas, drained and rinsed
-1 onion, chopped
-1 turnip, chopped
-2 tablespoons olive oil
-Salt and pepper, to taste
Instructions:
1. Preheat oven to 400 degrees F.
2. In a large bowl, combine the cabbage, chickpeas, onion, and turnip.
3. Drizzle the olive oil over the vegetables and season with salt and pepper. Toss to combine.
4. Spread the vegetables out onto a baking sheet and roast for 25-30 minutes, stirring once halfway through.
5. Serve the roasted vegetables in a bowl and enjoy!
