Roasted Sweet Potato and Brussel Sprout Bowl
Ingredients:
- 2 sweet potatoes, peeled and cubed
- 2 cloves of garlic, minced
- 1 onion, diced
- 1 lb Brussel sprouts, halved
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 400 degrees F.
2. In a large bowl, combine sweet potatoes, garlic, onion, and Brussel sprouts.
3. Drizzle with olive oil and season with salt and pepper.
4. Spread the mixture onto a baking sheet and roast in preheated oven for 25-30 minutes, stirring occasionally, until vegetables are tender and lightly browned.
5. Serve warm and enjoy!
