Roasted Sweet Potato and Zucchini Salad
Ingredients:
- 2 sweet potatoes, peeled and cut into cubes
- 2 zucchinis, cut into cubes
- 2 tablespoons honey
- Juice of 1 lemon
- 2 tablespoons avocado oil
- Salt and pepper, to taste
Instructions:
1. Preheat oven to 400°F.
2. Place the sweet potato cubes on a baking sheet and drizzle with 1 tablespoon of avocado oil. Toss to coat and season with salt and pepper. Roast in the oven for 20 minutes, or until tender.
3. Place the zucchini cubes on a separate baking sheet and drizzle with the remaining 1 tablespoon of avocado oil. Toss to coat and season with salt and pepper. Roast in the oven for 15 minutes, or until tender.
4. In a large bowl, combine the roasted sweet potatoes and zucchini.
5. In a small bowl, whisk together the honey and lemon juice. Pour the mixture over the vegetables and toss to coat.
6. Serve warm or chilled. Enjoy!
