Roasted Tomato and Parsley Salad

Ingredients:

- 4 large tomatoes, cut into wedges
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 2 tablespoons fresh parsley, chopped
- Salt and pepper, to taste

Instructions:

1. Preheat oven to 400°F.

2. Place tomato wedges on a baking sheet. Drizzle with olive oil and season with salt and pepper.

3. Roast for 20 minutes, or until tomatoes are softened and lightly browned.

4. In a large bowl, combine roasted tomatoes, garlic, and parsley.

5. Toss to combine and season with additional salt and pepper, if desired.

6. Serve warm or at room temperature. Enjoy!
