Recipe Name: Roasted Vegetable and Feta Bake

Ingredients:
- 1 head of broccoli, cut into florets
- 1 teaspoon paprika
- 2 large potatoes, peeled and diced
- 1 aubergine, diced
- 200g feta cheese, crumbled
- Salt and pepper to taste
- Olive oil

Instructions:
1. Preheat the oven to 200°C (400°F).
2. In a large mixing bowl, combine the broccoli florets, diced potatoes, and aubergine.
3. Drizzle olive oil over the vegetables and sprinkle with paprika, salt, and pepper. Toss to coat evenly.
4. Spread the seasoned vegetables in a single layer on a baking tray.
5. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly browned.
6. Remove the tray from the oven and crumble the feta cheese over the roasted vegetables.
7. Return the tray to the oven and bake for an additional 5-7 minutes, or until the feta is slightly melted.
8. Serve hot as a delicious and nutritious side dish or main course. Enjoy!
