Roasted Vegetable Frittata
Ingredients:
- 2 carrots, peeled and diced
- 1 eggplant, diced
- 1 sweet potato, peeled and diced
- 1 leek, diced
- 4 eggs
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions:
1. Preheat oven to 400 degrees F.
2. Place carrots, eggplant, sweet potato, and leek in a large bowl. Drizzle with olive oil and season with salt and pepper. Toss to coat.
3. Spread vegetables on a baking sheet and roast for 25 minutes, stirring occasionally.
4. Meanwhile, whisk together eggs in a medium bowl.
5. When vegetables are done roasting, reduce oven temperature to 350 degrees F.
6. Grease a 9-inch baking dish with olive oil.
7. Spread roasted vegetables in the baking dish and pour egg mixture over top.
8. Bake for 25 minutes, or until eggs are set and lightly golden.
9. Let cool slightly before serving. Enjoy!
