Recipe Name: Roasted Vegetable Medley

Ingredients:
- 1 small cabbage, chopped
- 2 carrots, sliced
- 2 beets, peeled and diced
- 1 onion, sliced
- 3 cloves of garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste

Instructions:
1. Preheat the oven to 400°F (200°C).
2. In a large mixing bowl, combine the chopped cabbage, sliced carrots, diced beets, sliced onion, and minced garlic.
3. Drizzle the olive oil over the vegetables and toss to coat evenly.
4. Season with salt and pepper to taste.
5. Spread the vegetable mixture in a single layer on a baking sheet.
6. Roast in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly caramelized, stirring halfway through.
7. Remove from the oven and serve hot as a delicious and colorful side dish.
