Roasted Whole Chicken with Potatoes and Vegetables

Ingredients:

-1 whole chicken
-3-4 potatoes, cut into cubes
-1 onion, diced
-2 carrots, diced
-2 celery stalks, diced
-2 cloves garlic, minced
-2 tablespoons olive oil
-1 teaspoon dried thyme
-1 teaspoon dried rosemary
-Salt and pepper to taste

Instructions:

1. Preheat oven to 375 degrees Fahrenheit.

2. Place the cubed potatoes in a roasting pan.

3. In a separate bowl, combine the onion, carrots, celery, garlic, olive oil, thyme, rosemary, salt, and pepper. Mix until all the vegetables are evenly coated.

4. Place the whole chicken in the center of the roasting pan, surrounded by the potatoes and vegetables.

5. Roast in the preheated oven for 1 hour and 15 minutes, or until the chicken is cooked through and the potatoes are tender.

6. Serve and enjoy!
