Russian Style Noma Makluba
Ingredients:
-1 lb boneless chicken thighs
-2 cups cooked basmati rice
-1 onion, diced
-1 red bell pepper, diced
-1 green bell pepper, diced
-1/2 cup frozen peas
-1/2 cup diced carrots
-1/4 cup olive oil
-1 teaspoon cumin
-1 teaspoon paprika
-1 teaspoon garlic powder
-1 teaspoon salt
-1/2 teaspoon black pepper
-1/2 cup tomato sauce
Instructions:
1. Preheat oven to 350 degrees F.
2. In a large skillet, heat olive oil over medium heat. Add the onion and bell peppers and cook until softened, about 5 minutes.
3. Add the chicken thighs and cook until lightly browned, about 5 minutes.
4. Add the cumin, paprika, garlic powder, salt, and black pepper. Stir to combine.
5. Add the tomato sauce and stir to combine.
6. Add the cooked basmati rice, frozen peas, and diced carrots. Stir to combine.
7. Transfer the mixture to a 9x13 inch baking dish.
8. Cover the dish with aluminum foil and bake for 25 minutes.
9. Remove the foil and bake for an additional 10 minutes.
10. Let cool for 10 minutes before serving. Enjoy!
