Make Russian-style Shakshuka
Recipe Name: Russian-style Shakshuka
Ingredients:
- 2 bell peppers (any color), thinly sliced
- 1 onion, thinly sliced
- 4 tomatoes, diced
- 4 cloves of garlic, minced
- Salt, to taste
- 4 eggs
Instructions:
1. Heat a large skillet over medium heat and add a drizzle of olive oil. Add the sliced bell peppers and onions to the skillet and sauté until they start to soften, about 5 minutes.
2. Add the diced tomatoes and minced garlic to the skillet. Stir well to combine all the ingredients. Season with salt to taste. Cook for another 5 minutes, allowing the flavors to meld together.
3. Make four small wells in the tomato-pepper mixture with a spoon. Crack an egg into each well. Cover the skillet with a lid and let the eggs cook for about 5-7 minutes, or until the whites are set but the yolks are still slightly runny.
4. Once the eggs are cooked to your liking, remove the skillet from heat. Sprinkle some additional salt and freshly ground black pepper over the shakshuka.
5. Serve the shakshuka hot, directly from the skillet. You can enjoy it as is or with a side of crusty bread or pita bread for dipping.
