Vegan Japanese Shuba Salad

Ingredients:

-1 package of vegan sushi rice
-1/2 cup of vegan mayonnaise
-1/4 cup of vegan sour cream
-1/4 cup of diced cucumber
-1/4 cup of diced carrot
-1/4 cup of diced red bell pepper
-1/4 cup of diced red onion
-1/4 cup of pickled ginger
-1/4 cup of sesame seeds
-1/4 cup of seaweed salad
-1/4 cup of toasted sesame oil
-Salt and pepper to taste

Instructions:

1. Cook the sushi rice according to package instructions and let cool.

2. In a large bowl, combine the cooked sushi rice, vegan mayonnaise, vegan sour cream, cucumber, carrot, red bell pepper, red onion, pickled ginger, sesame seeds, and seaweed salad.

3. Drizzle the toasted sesame oil over the salad and season with salt and pepper to taste.

4. Toss the salad until all ingredients are evenly distributed.

5. Serve the vegan Japanese shuba salad chilled or at room temperature. Enjoy!
