Salmon and Cheese Jalapeño Omelet

Ingredients:

-2 eggs
-2 tablespoons of shredded cheese
-1/4 cup of diced onion
-1/4 cup of diced salmon
-1 jalapeño, diced

Instructions:

1. In a medium bowl, whisk together the eggs until they are light and fluffy.

2. Heat a non-stick skillet over medium heat. Add the onion and jalapeño and cook until the onion is softened, about 3 minutes.

3. Add the salmon and cook for another 2 minutes.

4. Pour the egg mixture into the skillet and sprinkle the cheese over the top.

5. Cook for about 2 minutes, or until the eggs are set.

6. Flip the omelet over and cook for another 2 minutes, or until the cheese is melted.

7. Serve the omelet warm. Enjoy!
