Salmon and Chicken Rice Bowl
Ingredients:
-1 cup uncooked white rice
-1 cup uncooked pasta
-1 boneless, skinless chicken breast, cut into cubes
-1 salmon fillet, cut into cubes
-1 potato, peeled and diced
-2 carrots, peeled and diced
-1/2 cup salad greens
-1 tablespoon olive oil
-Salt and pepper, to taste
Instructions:
1. Preheat oven to 375°F.
2. In a large pot, bring 4 cups of water to a boil. Add the rice and pasta and cook according to package instructions.
3. In a separate bowl, combine the chicken, salmon, potato, and carrots. Drizzle with olive oil and season with salt and pepper.
4. Spread the mixture onto a baking sheet and bake for 20 minutes, or until the chicken and salmon are cooked through.
5. Divide the cooked rice and pasta between two bowls. Top each bowl with the chicken and salmon mixture and the salad greens.
6. Serve warm and enjoy!
