Salmon and Chickpea Noodle Bowl

Ingredients:

- 2 salmon fillets
- 2 eggs
- 2 cups cooked noodles
- 1 avocado, diced
- 1 pitta bread, toasted and cut into cubes
- 1 cup cooked chickpeas
- 1 mango, diced

Instructions:

1. Preheat oven to 375°F.

2. Place salmon fillets on a baking sheet lined with parchment paper and bake for 15 minutes.

3. Meanwhile, cook the noodles according to package instructions.

4. In a separate pan, scramble the eggs.

5. In a large bowl, combine the cooked noodles, scrambled eggs, diced avocado, toasted pitta cubes, cooked chickpeas, and diced mango.

6. Once the salmon is cooked, flake it with a fork and add it to the noodle bowl.

7. Serve the noodle bowl warm and enjoy!
