Salmon and Egg Hash
Ingredients:
- 2 salmon fillets
- 2 eggs
- 1/2 onion, diced
- 1 tomato, diced
- Salt and pepper to taste
Instructions:
1. Preheat oven to 375°F.
2. Place salmon fillets on a baking sheet and season with salt and pepper. Bake in preheated oven for 15 minutes.
3. Meanwhile, heat a large skillet over medium-high heat. Add the onion and cook until softened, about 5 minutes.
4. Add the tomato and cook for an additional 2 minutes.
5. Crack the eggs into the skillet and season with salt and pepper. Cook until the eggs are cooked through, about 3 minutes.
6. Flake the cooked salmon into the skillet and stir to combine.
7. Serve the salmon and egg hash warm. Enjoy!
