Salmon and Mushroom Pasta with Bottarga
Ingredients:
- 2 fish heads
- 2 bell peppers, diced
- 2 salmon fillets, cut into cubes
- 1/2 cup mushrooms, sliced
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 teaspoon red pepper flakes
- 2 tablespoons chopped fresh parsley
- 2 tablespoons grated bottarga
- Salt and pepper, to taste
- 8 ounces dry pasta
Instructions:
1. Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions. Drain and set aside.
2. In a large skillet, heat the olive oil over medium heat. Add the fish heads and cook until golden brown, about 5 minutes.
3. Add the bell peppers, mushrooms, garlic, and red pepper flakes. Cook for another 5 minutes, stirring occasionally.
4. Add the salmon cubes and cook until just cooked through, about 3 minutes.
5. Add the cooked pasta to the skillet and stir to combine.
6. Sprinkle the bottarga over the top and season with salt and pepper.
7. Serve the pasta with the fresh parsley sprinkled over the top. Enjoy!
