Make Salmon and Rice Pilaf
Salmon and Rice Pilaf
Ingredients:
- 2 cups of white rice
- 2 tablespoons of olive oil
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 cups of chicken broth
- 1 teaspoon of dried thyme
- 1/2 teaspoon of salt
- 1/4 teaspoon of black pepper
- 1 pound of salmon fillets, cut into 1-inch cubes
- 2 tablespoons of chopped fresh parsley
Instructions:
1. Preheat oven to 375 degrees F.
2. Heat olive oil in a large skillet over medium heat. Add the onion and garlic and cook until the onion is softened, about 5 minutes.
3. Add the rice and stir to coat with the oil. Cook for 1 minute.
4. Add the chicken broth, thyme, salt, and pepper. Bring to a boil, then reduce heat to low and cover. Simmer for 15 minutes.
5. Uncover the skillet and add the salmon cubes. Stir to combine. Cover and bake in preheated oven for 15 minutes.
6. Remove from oven and fluff with a fork. Sprinkle with parsley and serve.
