Make Salmon and Sweet Potato Curry with Spinach

Ingredients:
- 1 cup rice
- 2 tomatoes, diced
- 2 cups spinach
- 2 tbsp curry powder
- 2 sweet potatoes, peeled and diced
- 1 lb salmon fillets, cut into cubes
- 1 tsp salt
- 3 cloves garlic, minced
- Juice of 1 lemon
- 1 can chickpeas, drained and rinsed
Instructions:
1. Cook the rice according to package instructions and set aside.
2. In a large skillet, heat some oil over medium heat. Add the diced tomatoes and cook until they start to soften.
3. Stir in the curry powder and garlic, and cook for another minute until fragrant.
4. Add the diced sweet potatoes and cook for about 5 minutes until they begin to soften.
5. Add the salmon cubes to the skillet and season with salt. Cook for another 5-7 minutes until the salmon is cooked through.
6. Stir in the spinach and chickpeas, and cook until the spinach wilts.
7. Squeeze the lemon juice over the curry and give it a final stir.
8. Serve the salmon and sweet potato curry over the cooked rice.
